Abstract (english) Organic food production is defined as a group of production systems that seek to produce food free of synthetic chemical contaminants, and which has a high nutritional and organoleptic value. These systems contribute to environmental protection, reduce production costs and are a source of income for a dignified life for farmers. During the 20th century, with various contributions and later variants, this way of farming spread throughout the European Union, although it was not officially recognized until the early 1990s, when special legislation was established at European Community level. The development of agriculture from its inception to the present day has led to the progressive use of mechanization and the intensification of agriculture until conventional agriculture was reached. The conventional system of agricultural production is currently presented as the predominant model of production in the most developed countries. Global trends, which have been increasingly debated in the last thirty years, affect food security and the overall sustainability of food and agricultural systems, and also raise a number of issues, including the sustainability of food systems due to increasing global populations and increasing pressure on overstrained resources. climate change. The area under organic farming in the European Union has grown by almost 66% in the last ten years. Between 2012 and 2019, Bulgaria, France, Croatia and Hungary recorded an increase in total ecological area of over 100%. Croatia's accession to the European Union in 2013 also meant taking on the obligations contained in the Common Agricultural Policy. The total recorded area under organic production in 2019 amounted to 108,169 hectares, or 7.2% of the total used agricultural area. In 2007, that share was only 0.6%. Although organic production is an increasingly topical issue in the Croatian public space and although it has a huge development potential as part of the tourist offer, certain factors still significantly affect its growth, including price, information of producers and consumers and underdeveloped incentive system.
